Cheesy Meatballs

Cheesy Meatballs

Simple to make - low in fat, healthy and syn free if on Slimming World providing you use the cheese as a 'b' choice. 



You can either use turkey mince or use extra lean  Beef 5% mince. You can make these as spicy or as mild as you like and serving them with a simple to make curry sauce really makes this a tasty dish.

Ingredients

Pack of Turkey Mince
2 Baby Bell Cheeses
Curry powder - tablespoon
Lea & Perins sauce or soy sauce
seasoning

Cut the baby bells into 4. Make your meatballs by adding the curry powder and seasoning's. Once you have rolled into a ball insert a quarter piece of the cheese into each meatball. Chill in the fridge for a few hours to allow to set. Bake in halogen or normal oven for aprox 20mins. Served with Noodles and curry sauce. 

Simply quick Curry Sauce

Tin Tomatoes 400gr
4 garlic cloves, peeled and crushed
Root Ginger - 2.5cm peeled 
soy sauce
half teaspoon of sweetener
curry powder - 2 Tablespoon
garam masala - teaspoon
Salt, Pepper, Garlic powder
fresh coriander

(you can also add some Fat Free Natural Yoghurt before serving to add a creamy consistency) add meatballs above or prawns for a simple curry.

Slimming World Cheeseburgers

Healthy Turkey or Mince Cheeseburgers



These burgers really do taste delicious and you would never ever believe that they where as healthy as they are because they taste that good. The great thing about these burgers is the cheese is hidden inside the burgers so when you bite into it you get that lovely extra creamy surprise.  If following slimming world and on the Extra Easy Plan and you use the cheese and muffin as an "a and b" choice then this recipe is free. 

Ingredients for Burger 

Turkey Lean Mince (1 pack from lidels will make 3 - 4 burgers)
Baby Bell Cheese
capers
spring onions
seasoning of choice - salt, pepper, garlic salt or chilli pepper
Worcester Sauce - Good sprinkle off

Mix mince with your hands and all ingredients except the cheese. Roll into a burger shape then place one baby bell inside each burger. Ensure the mince covers all the cheese both front and back. Then place cling-film tightly round the burgers and put in freezer for later or rest in fridge to chill if having later. 

Server on a  brown bap or bun with plenty of salad, onions and tomato. Use thick yogurt dip or quark to spread on bread so as not to taste to dry. Serve with either slimming world chips, as it is or salad and relish.

Slimming World Steak and Mash

Steak & Mash

This simple dish is full of super-foods and easy to make but very very tasty. If you are using steak you have a lot of choices, ie; rump, sirloin, ribeye... the choice is up to you however if using ribeye which in my opinion is the tastiest of steaks then you may need to add a few syns as ribeye does have some fat in the middle of it. 

Ingredients

For the potatoes
2 maris piper potatoes
2 carrots
2 cloves garlic
fresh dill
2 spring onion

Veg
Red pepper
sugar snap peas
mushrooms
sw coleslaw made from shredded carrots and cabbage

For the Steak
Steak of choice
stock cube
Spray fry light (olive oil)


Crush the stock cube and rub onto the steak. Fry steak to your liking then add to the pan sugar snap peas and mushrooms sprayed with a little fry light.  Leave steak to rest. 

Boil potatoes & carrots, when soft mash in some garlic, fresh dill and add the diced spring onions. Serve with the steak.

Chicken Peri Peri Niblets with dip

Peri Peri Chicken Nibbles with Superfree Youghurt and Chilli Dip


This tasty snack is for those of you whom would like a healthy snack at any time of day without worrying about piling on the pounds. Although there seems to be a lot of ingredients in the dip, it really is worth making the effort to add them all as it really does taste amazing. 

For the Chicken

1 Kilo Chicken Niblets or small skinless drumsticks
Paprika
Peri Peri seasoning
Fresh Lime Juice
Worcester Sauce

place chicken in an ovenproof dish, sprinkle with all the above ingredients and spray with olive oil Fry Light for aprox 20mins. 

For the Dip

Use equal amounts of  FFFF (fat free Fromage Frais)  and fat free youghurt
Half of a fresh red chilli chopped finely (remove seeds so not too hot)
Spring onion finely chopped x 1
Quarter of a tin of sweetcorn
Two tsp of dry mint
Dry chilli and garlic salt
1 fresh clove of garlic - crushed
fresh ground black pepper - good sprinkle 
fresh grated ginger - aprox 1/4 of teasp
fresh chopped coriander 
Half of fresh Lime - squeeze all juice then stir all ingredients together

Leave in the fridge to chill then dip away to your hearts content, use on top of jacket potatoes, as a dip or with any meat dishes as a tasty fresh relish. 

If following Slimming World on Extra Easy this is all classed as "Free" and has lots of "Superfoods" and healthy herbs and spices in the dip.

Slimming world Chicken Kiev

HEALTHY CHICKEN KIEV

This is simple to make and both the filling and the breadcrumb covering can be used as your A and B choice if following the extra easy plan on Slimming world therefore making this Free,  and if not on a diet, its still a great and tasty way to make this classic dish healthier. 


Makes 3 pieces 

Recipe

3 chicken breasts
4 triangles of laughing cow light cream cheese
2 cloves of garlic
3 slices of wholemeal bread from a small loaf, left out to harden slightly
1 beaten egg
tsp dried herbs of choice 

Make breadcrumbs fine by blending the sliced bread
finely crush 2 cloves of garlic and mix with the cheese triangles
add the herbs to the cheese mix
slit the middle of the breast slightly to form a small pocket then stuff this with a teaspoon of the garlic cheese
fold in the middle and roll the chicken into the egg mixture
then dip into the breadcrumbs
place the breaded chicken in the fridge for a few hours to help set the cheese
Spray the breast with fry light before placing in a pre-heated over or for best results cook in a halogen oven on the top rack for aprox 30mins until nice and crisp 


Serve  With

Slimming World Chips or Jacket potato and large Salad for a nice healthy lunch or dinner

If you want to cook one and freeze the others then simply wrap in clingfilm and freeze before cooking.

Slimming World Yogurt Dip

Trish's Yoghurt Dip 


This simple and easy to make dip is ideal for adding to a jacket potato, as a topping for chillis or curry or just as a simple dip. I make this every week and always have a large pot in my fridge on hand. 



Ingredients

Equal measures of Fat Free Fromage Frais & Fat free Greek Yogurt or zero Total yoghurt. Add the following however you can really add whatever spices you like however I have used the following with great success:

Dried Mint - 2 tsp
Garlilc Salt - 2 tsp
Celery salt - 1tsp
Can use fat free Greek as alternative
Sea Salt -  1 tsp
Black Pepper - good sprinkle 
touch of cinnamon
touch of paprika
finely chopped spring onion
finely chopped cucumber
finely chopped coriander
diced gerkins & or tablespoon of capers
1/4 juice one fresh lemon or squirt of lemon jiff (better with fresh though) (important ingredient & does make a differece to the taste)
clove of fresh garlic or half tsp of dried chilli if you prefer a dip with a kick

Simply mix together and put in tuppaware dish to store in fridge. Should keep fresh for aprox 4 - 5 days although mine does not tend to last that long. You will note there are quite a few superfree foods in here such as cucumber, spring onion, so go and Enjoy! - Syn Free

Chicken Thighs

KFC CHICKEN THIGHS

This recipe really will save you hundreds of calories and tastes just as good if not better than kfc chicken. This is a Slimming World friendly recipe and is classed as syn free. 


Crispy tasty chicken thighs

Ingredients

8 pieces of chicken thighs - all skin removed
4 tablespoons of dried cous cous
4 tablespoons of dried smash potato
celery salt, garlic seasoning, paprika and black pepper
1 lightly beaten egg

Directions

Mix the cous cous and dried potato powder plus seasoning together. Dip a chicken thigh  in the beaten egg then dip with the dried spicy powder mixture. Do this for all 8 pieces and place on a non stick baking tray. Use a can of 1 cal spray and lightly spray the chicken pieces. You can also use a halogen oven if you prefer. Place in the oven on med heat and cook for aprox 20, 30 mins until golden brown and crispy




for a really healthy lunch or dinner serve with diced cabbage and peppers and boiled rice and a side of yogurt and garlic dip made with fat free Greek yogurt and Fat free fromage frais.
