Halloumi Cheese Wrapped in Parma Ham

Halloumi cheese is so versatile and makes a great main course or starter. To serve as a starter simply do the following:-

Serves 3
Slice packet of cheese into 6 thick slices
Wrap a large basil leaf round the cheese then wrap one slice of parma ham round each one. Simply fry in a non stick pan with a little spray oil or grill for aprox 4 to 5 mins each side and serve on a side plate with garnish of assorted salad.

In the book 59 seconds by Professor Richard Wiseman, he quotes an experiment by Brian Wansink who invited a group of friends to a party and secretly conducted the following experiment.  Each guest was randomly handed either a 17 or 34 ounce bowl and a 2 or 3 ounce spoon. The guest then helped themselves to ice cream. However, seconds before they took their first mouthful, researchers snatched away the bowls and weighed them. The results revealed that those given the large spoons and large bowls had on average, taken 14 per cent and 31 per cent more ice cream than their modestly equipped companions.

Celebrity Liz Hurley has  been said to only eat with her own cutlery when dining out as she inists that using a smaller knife and fork helps her to eat much less and thats how she keeps her figure. It has been shown that if chocolates are placed in a glass jar on display then you will eat more of them than if in a coloured jar. We really do eat with our eyes so this is not really surprising.

Slimmers world Lemon Meringue Pie

Lemon Meringue Pie syn free

300 gms quark
1 lemon, grated rind and juice
3 medium eggs, separated
4 tbspns granulated sweetener

Preheat oven to 180°C / 350°F / Gas Mark 4.
Beat the Quark in a bowl to make it smooth and creamy. Add lemon rind and juice, egg yolks and 2 tbsp of the sweetener. Share between 4 small heatproof dishes or ramekins. Stand them on a baking sheet and bake for 10 minutes.
Meanwhile, whip egg whites in a grease-free bowl until they hold their shape. Whisk in remaining sweetener.
Remove desserts from oven and pile meringue on top. Return to oven to bake for 5 more minutes, until golden brown.
Serve chilled.

Slimmers World Quick Quiche

Slimmers world really can help you to lose weight and it really is amazing just what you can eat. Having lost nearly a stone in less than 8 weeks its a healthy and easy way to lose extra pounds without depriving yourself of really good and filling foods and I can assure you that you will not go hungry. To be honest I am always surprised when I lose any weight as I can assure you I really do eat anything from shepherds pie, lasagna, full English breakfasts are the norm and of course I like a glass of wine or 3. It really is just a matter of food optimising and although I could not really tell you how it works or why, I just know that it does. Below is one of my favourite recipe for a free snack throughout the day or even as a meal served with homemade chips and beans or a nice refreshing salad.

Homemade Tuna & Sweetcorn quiche

3 Eggs
tin of tuna in brine
small tin of sweetcorn or baked beans if you prefer
mushrooms
sprinkle of grated cheese (optional)



Mix all ingredients together and pour into a Pyrex dish (I use the lid of one of mine) or something ovenproof,  then simply bake in a medium heat in the oven for 20mins. When its complete you can serve as suggested above or cut into pieces and keep in the fridge for a hand free snack anytime.

If you like thin based pizzas you will love this. It can be made and ready to serve in less than 10 Min's.

Ingredients
1 tortilla wrap
feta cheese
1 low fat cheese slice
mushrooms
cooked chicken
creme fresh
chili sauce

Place tortilla wrap on a baking tray. Add spoonful of creme fresh and cover the base. Add cooked chicken, raw mushrooms sliced, feta cheese, and a drizzle of sweet chili sauce. Top with bits of a cheese slice and place under grill until bubbling and crisp. Serves 1

Spicey Chicken Stuffed Pepper

STUFFED SPICY CHICKEN PEPPERS
This is so wonderful it can be served as an amazing starter that will impress your guests or have as a main course on its own.

Serves 1

1 large long red pepper
chicken
chili
garlic
feta cheese
mushrooms
cheese slice

cut the pepper in half and open out. Place in oven and spray with oil and place skin side up. Add a few cloves of unpeeled garlic and some uncut mushrooms, add a couple of  small chicken fillets and season to taste. Bake everything for approx 15 Min's. After that time turn your pepper over and add some feta cheese, place the mushrooms inside and the now half cooked garlic and baked chicken. Sprinkle some dried chili and put back in over for approx 12 Min's, finally add the cheese slice so that it melts over all the ingredients......

Serve as starter or main

Chicken & Walunut Salad


Tasty, healthy and simple. Walnuts help lower cholesterol and chicken is an excellent source of protein.

Serves 1 -
hand full of diced chicken
lettuce
cabbage
walnuts
tomato
cucumber
hard boiled egg
low fat mayo or salad cream

Spray chicken with a little oil then grill or oven bake. Chop ingredients for salad and add to large bowl. When the chicken is cooked simply mix in and serve with crackerbread or crusty bread for a light and very healthy lunch or light dinner.
